Did you know that the Heart of Jutland has a wonderfully wild larder?

Along the coast and in the green woodlands of the Heart of Jutland, you can discover ingredients growing and living in the wild.

Catch crabs in the fjord and cook them on the beach, taste sea kale by the water, look for wood sorrel beneath the trees or head into the woods in autumn in search of chanterelles and other wild mushrooms.

It is both an outdoor experience and a meal with a true sense of place. By following the seasons, gathering only a little and using what is available nearby, you get closer to the landscape – and rediscover a simpler, more thoughtful way of eating.

Three local food experiences worth making a detour for

We all have our favourites. Here are three places in the Heart of Jutland that we think could become some of yours.

Visit all three and you can enjoy everything from relaxed bistro food and Michelin-recognised dining among the treetops to local Danish whisky made with nettles. 

Two Michelin stars in the Heart of Jutland

Get ready for two truly special dining experiences in Denmark. In Fredericia, you will find Ti Trin Ned, while LYST is located by Vejle Fjord in the striking Fjordenhus building. Both restaurants have been awarded one Michelin star and welcome you into a world where ingredients, craftsmanship, surroundings and hospitality come together beautifully.
