Restaurant Nögen - Social dining in Kolding

We transform surplus ingredients into unique taste experiences. Our kitchen and bar create new dishes every week, using imperfect produce and fallen fruit – all as part of a social dining experience.

Our concept is built around a mission to combat food waste - and we do this by transforming raw materials that would otherwise go to waste into gastronomic experiences. We work with odd vegetables, by-catch, mis-packaging and alternative cuts of meat. From these ingredients, our skilled kitchen puts together new servings every week, which vary depending on what we get in. Our bartenders also contribute to the mission by creating cocktails, mocktails and juices from fallen or damaged fruits and vegetables. The concept is social dining, which means that the food is served as small, shareable dishes.

Guests simply have to choose from one of our three menus, and we will take care of the rest.

  • Half Nögen: 7 courses divided into 2 snacks, 2 appetizers, 2 main courses and 1 dessert.
  • Full Nögen: 10 courses with 3 snacks, 3 appetizers, 3 main courses and 1 dessert. Perfect for those who want a deeper gastronomic experience.
  • Full Nögen: 10 courses combined with an exclusive wine menu with bottomless bottles and the option of extra portions of your favorite dishes.

Regardless of what guests choose, they can expect a unique and sustainable dining experience, where both taste and consideration come together in a higher unity.
